Soft cheese, whole goats milk, production technology- lactic curd (similar to buche).has a mild and soft texture almost melts in the mouth and a distinct goaty taste. Has a white mould, stained with spots (Ketem in Hebrew) through maturation.
Maturation duration- 7-10 days minimum.
